Belons, also known as European Flats. They were brought to the US from Europe in the 1950s, and since then, have flourished to become a natural species in the waters of Maine. They are diver harvested throughout the season between September and April. They are banded to help keep them closed for shipping and are delivered in a styrofoam lined box. You either love them or hate them, but a genuine oyster connoisseur will learn to appreciate the strong brine and intense coppery finish.
