The NAKED COWGIRL® Oyster is a natural occurring beach oyster from the Hood Canal of Washington State. The 3 to 4 year old oyster is very mature and delicious taking on the flavors of the rocky shoreline of The Naked Cowgirl® Oyster Ranch...where you're certain to come across a Naked Cowgirl lying on the beach. Her sexy fluted shell flares at the edges in a curvy crescendo of a black, striking contrast with pearly white interior, giving it an appearance of laced lingerie. The firm texture of her meat is a delight on the tongue and slowly unfolds notes of sweet cantaloupe and celery with hints of fresh salinity; simply gorgeous in a single large slurp. She comes in regular size 3" - 4", and the larger girl is 4" - 5".

Royal Miyagi Oysters are a Pacific Northwest oyster from one of the British Columbia oyster appellations on the Sunshine Coast near Vancouver Island, BC. Farmed by suspension line to beach method combining two oyster farming methods allowing a stronger, less brittle shell and firmer meat with a mild brininess and kiwi-like finish.
Farmed in Barkley Sound on the west coast of Vancouver Island, Mittaki Oysters are small, plump and dense with a delicious sweet meat and a light salty finish.

Oakland Bay, WA. The Genuine Kumamoto is a Purebred Pedigree Sikamea Species Oyster. Kumamoto are definitely a giant among oysters, but not because they are large. It is, in fact, quite small, only slightly larger than the tiny Olympia oyster. With its deep cupping and highly sculptured, fluted shell, this smooth, fruity morsel has a dedicated fan club. Lovers of Kumos will wait an eternity for them, and claim that with them they can love as long.
AUTHENTIC KUMAMOTO OYSTER
This purebred pedigree Kumamoto is produced in San Quintin, Baja California where the pristine cold waters of the Pacific are rich with plentiful algie year round. The moderate air temperature remains in the 70° - 80° range year round producing a perfect oyster growing environment for this aquaculture. Although the Baja Kumamoto are a small oyster, they have a robust, sweet meat with a big salty finish.
CALIFORNIA ROCK OYSTER
California Rocks are a Kumamoto Hybrid and can make a nice bargain alternative to the more expensive Genuine Kumamoto.
Baycenter, WA. The Shigoku oyster is a suspended culture pacific oyster that is repeatedly tumbled during the course of its grow-out. It is raised in two different Washington locations; coastal Willapa Bay and northern Puget Sound’s Samish Bay. The tumbling process takes place while the oyster is in the water by means of a round floating basket that is constantly turned end over end by wave and tidal action. The result, which takes almost two years, is an oyster that has a smooth, hard shell and a very round shape. It tends to be salty, mildly sweet, with a long fruity finish.
FAT BASTARD OYSTER
Willapa Bay, WA. The Fat Bastard oyster is also a suspended culture pacific oyster that is repeatedly tumbled during the course of its growth. This three year old oyster is almost twice the size of its sister the Shigoku oyster and also has a smooth, hard shell and a very round shape. It tends to be salty, mildly sweet, with a long fruity finish.
PACIFIC PLUMP OYSTER
Totten and Eld Inlets, WA. The PACIFIC PLUMP OYSTER shell is ruffled like the hem of an evening gown and it's flavors couldn't be more distinctly feminine. The floral nose of daisy flower fades into an herbal note of chervil on the palate. The creamy texture is a surprising compliment to the mouthfeel of this plump oyster's lacy salinity.
Hammersley Inlet, WA. The Lurida species oyster is an indigenous native oyster of the Pacific coast of North America and is the smallest oyster in our lineup. "The Might Oly" unlike its size has a HUGE personality. Subtle sweetness gives way to a rich minerality and a long copper finish.
Deep Bay, BC, Canada. Kusshi translated from Japanese means ‘precious’, and nothing could be a more apt description. Kusshi has an incredibly soft, delicate texture with crisp clean notes of watermelon rind on the palate and a wonderfully faint lingering of salinity on the tongue.

The KIWA FLAT Oyster from Port Underwood, Marlboro Sounds, New Zealand is an exsquisite and exotic breed of oyster only available in the US since 2014. Her creamy plump meat and outstanding visual appeal offers a balanced crisp oceanic brine which is distinct and highly complex. Her meat is firm but uniquely creamy and decadent, almost velvety with a fresh ocean and seaweed aroma. Although you will experience a vibrant hint of brine, she remains creamy and sweet with a long sweet cucumber finish and a lingering metallic finish on the lips.
